As per usual my goal is to make these light and crispy, but having you leaving full!

Below is the truly unique drink + food recipe of the week, and a lighting marketing course!

Let’s get into it.

COCKTAIL HOUR

CAFE CON LECHE LOCO

DESCRIPTION: A rum-and-aquavit sour with the flavors of a cappuccino /

This can be considered a spin on the ever so popular espresso martini, with a vibrant citrus element, and a hint of nuttiness.

INGREDIENTS:

Guayanese Rum, Aged Aquavit, Creole Shrubb, Coffee, Orgeat, Lemon, Egg White

How:

½ ounce *Cold Brew Coffee Concentrate (House Made Directions Below)

½ ounce Rhum Clément Créole Shrubb

¾ ounce **Orgeat (House Made Directions Below)

¾ ounce lemon juice

1 ounce Linie aquavit

1 ounce El Dorado 15-Year rum

1 egg white

Combine all the ingredients except the egg white in a cocktail tin, then add the egg white to the tin. Cover and dry shake to emulsify the egg white. Fill the tin with ice, cover again, and shake. Strain the cocktail into a coupe.

Glass: Coupe / Ice: None

*COLD BREW COFFEE CONCENTRATE

455 g whole coffee beans, ground to medium coarseness using a burr grinder 2 kg water

Place the ground coffee in a toddy or a ball jar, add the water, and stir gently until all of the grounds are submerged. Be careful to not overstir, or it will become overextracted. Cover and allow it to sit in the refrigerator for 18 hours. Strain through a coffee filter or cheesecloth. Store in an airtight container, refrigerated, for up to 1 week.

ORGEAT

500 g sliced almonds

800 g water

800 g sugar

20 drops orange blossom water

Brix: 50

Preheat the oven to 100°C/200°F. Spread the almonds on a sheet pan and toast until lightly golden, about 20 minutes. Crush the almonds using a food processor. Transfer to a large container and add the water. Allow to sit for 8 hours. Strain the mixture through cheesecloth into a bowl, squeezing the cheesecloth to extract all the liquid. Add the sugar and orange blossom water and stir until the sugar is dissolved. Let cool to room temperature and store in an airtight container, refrigerated, for up to 1 month.

THE DISH

SPAM-TACULAR KIMCHI FRIED RICE

This flavor PACKED dish has made it onto some of the most prestigious menus because of it’s popularity, and the contrasting nature of being simple yet complex at the same time. The is great as an appetizer.

INGRIEDENTS:

2 eggs, beaten

2 cloves garlic, minced

6 oz SPAM (½ can), diced

8 oz frozen mixed vegetables

3 cups cooked white rice

¼ tsp black pepper

2 tbsp kimchi liquid

¼ cup kimchi

2 tbsp soy sauce

1 tsp sesame oil

1 tsp toasted sesame seeds

2 scallion (spring onion) stalks, minced

2 tbsp of your preferred cooking oil

Sriracha and/or ketchup, to taste 

HOW:

Heat 1 tbsp of cooking oil in a large pan over medium heat. Add garlic and SPAM. Cook until crispy. Add mixed vegetables (i.e. corn, peas, carrots-whatever you like!). Cook until tender.

Add rice and evenly distribute throughout. Add soy sauce, sesame oil, kimchi liquid, kimchi, black pepper, and sesame seeds. Stir until even. Heat 1 tbsp of cooking oil in a small pan over low heat. Add eggs and cook both sides. Serve the SPAM fried rice in a bowl and top with the egg folded over. Garnish with scallion (spring onion). Finally, draw a smiley face on the egg with some Sriracha or ketchup.
